It opens with sweet and enveloping 60%, with floral and syrupy layers; next is 69%, with crunchy Caribbean cane sugar dancing in soft and caramelised cocoa. The 75% evokes the depth of an intense and persistent hot chocolate. The 77%, enriched with roasted cocoa bean grains, offers surprising hints of spice and fruit fondue. The 85%, with cocoa from Venezuela, releases elegant hints of flowers, fruit and cream. The last stop 80% barrel-aged chocolate takes the journey to the next level, with Caribbean cocoa aged in rum casks and smoked Pacific beans to create a deep, almost liqueur-like flavour.
